  • 1 tsp to 1 tbsp mild curry powder (adjust to taste)
  • 1 heaped tsp mango chutney
  • 1 tbsp raisins or sultanas (optional, for sweetness)
  • 2 large tortilla wraps
  • Fresh greens (handful of spinach, rocket, or shredded lettuce, plus sliced cucumber)

Instructions

  1. Mix the sauce: In a mixing bowl, combine the Greek yogurt, mayonnaise, mild curry powder, and mango chutney until smooth.
  2. Coat the chicken: Add the chopped or shredded chicken and raisins (if using) to the sauce. Stir well until completely coated. Season with a pinch of salt and pepper.
  3. Warm the wraps: Microwave the tortilla wraps for 10–15 seconds to make them soft and pliable.
  4. Assemble: Lay down a bed of fresh spinach, rocket, or lettuce along the center of each wrap. Spoon the coronation chicken mixture right on top.
  5. Roll and serve: Fold in the bottom edge of the wrap, fold the sides inward, and roll it up tightly. Cut in half and serve immediately
